Recipe: Mexican Chicken Soup
Ready for an easy, delicious and healthy meal?
INGREDIENTS:
2-3 Chicken Breast
1 Garlic Clove
2 TBSP of Butter
2 15-ounce cans of stewed tomatoes
1 cup of salsa
1/2 cup of cilantro
1 TBSP or more of ground cumin
8 ounces of Monterey Jack cheese, cubed
Sour Cream
DIRECTIONS:
1. Cook and shred chicken
2. Add minced garlic to butter and saute
3. Add all ingredients except sour cream and cheese and simmer
4. Cover. Simmer for at least one hour
5. Divide cubed cheese into 6 bowls and ladle ssoup over cheese
